Labor Day weekend is a perfect time to celebrate the last bit of summer weather with friends and family, so why not throw a little party? One of my favorite go-to party meals is a taco bar. You can get everything prepped in advance and have plenty of time to spend with guests without feeling stuck in the kitchen. Here are the things I’m always sure to include:
Ground meat or vege crumbles: Brown 1 lb. meat or crumbles in a large skillet, then add Homemade Taco Seasoning. Cover with a lid to keep warm until ready to serve.
Refried beans: Combine 1 can refried beans with 1 teaspoon cumin and 1/4 teaspoon chili powder. Warm in the microwave for 1 minute just before serving.
Black or pinto beans: You can buy 1 can of seasoned black beans to make the prep easier, or combine 1 can unseasoned beans with 1/2 cup diced onion, 1 clove minced garlic, 1 tablespoon chopped cilantro, and 1/4 teaspoon cayenne pepper plus salt to taste. Warm in a saucepan.
Taco shells: I normally get a package each of soft and crunchy. (You can always make Quinoa Taco Bake with the leftovers.)
Roasted Tomato Salsa and Guacamole: Smash 2 ripe avocados with a fork then combine with 1 diced tomato, 1/4 cup minced onion, 1 clove garlic minced, and the juice of 1 lime. Season with salt and pepper.
Additional toppings: Lettuce, sour cream, shredded Mexican cheese blend, lime wedges
