We had a cookout with some friends over the weekend, and I wanted to offer a little sweet treat after dinner. I decided to do 4 different popcicles: one for adults-only and three others in a variety of flavors. They were a huge hit! I made them in 3-oz plastic cups for just the perfect snacking size, and so everyone could try all of the flavors. You could also use ice cube trays for smaller pops or traditional popcicle molds.
Each recipe below makes 8-10 pops in 3-oz cups. I would recommend leaving them all in the freezer overnight before eating (or at least 4-6 hours), inserting the sticks after 1 1/2 hours.
Watermelon with Mint and Lemon
Put 1 1/2 lbs. seedless watermelon flesh (about 4 cups) in a blender or food processor and blend until smooth. Add 1/4 cup mint leaves, 1 teaspoon lemon zest, and 2 tablespoons sugar. Pulse until well combined. Pour into cups or molds and freeze.
Pit 6 peaches and blend in a blender or food processor until mostly smooth. (I left the skins on, but you could take them off.) Add 2 tablespoons honey and the flowers of 3 sprigs of lavender, plus 1/4 cup of a sweet, light-colored juice. I used a peach mango blend I had on hand, but you could also use white grape or even lemonade. Blend until combined and pour into cups or molds and freeze.
Put 2 cups strawberries (halved with stems removed) and 2 cups rhubarb (cut into 1/2″ pieces) in a saucepan with 1/2 cup water and 1/2 cup sugar. Simmer for 15 minutes, stirring frequently. Remove from heat and allow to cool for at least 30 minutes. In a blender, add 3/4 cup plain Greek yogurt and 1/2 teaspoon vanilla extract. Add the fruit mixture and blend until smooth. Fill cups or pop molds and freeze.
Combine 3 cups limeade with 3 tablespoons tequila and 3 tablespoons Cointreau or Grand Marnier. I didn’t have those liquors on hand, so I used one nip bottle of each, which is basically equivalent to 3 tablespoons. Pour into cups or molds and freeze, inserting sticks after 2 hours. (These take a little longer to freeze because of the alcohol content.)
