Pumpkin Gingerbread

Ingredients
  • 1½ cups sugar
  • ½ cup vegetable oil
  • 2 eggs
  • ⅓ cup water
  • 1 cup of fresh pumpkin or ½ can of pumpkin puree
  • 1 teaspoon ground ginger
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 1¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
Instructions
  1. Preheat your oven to 350 degrees F. Lightly grease and flour one 9"x5" loaf pan or 1 muffin tin.
  2. Using a stand mixer, combine sugar, oil, eggs, water and pumpkin.
  3. Add pumpkin, spices, flour, soda, salt, and baking powder and mix until well combined.
  4. Pour batter into loaf pan or muffin tins. For loaf, bake for 50 minutes to 1 hour, or until a knife or toothpick inserted in the center comes out clean. For muffins, bake for 25-30 minutes.
