Superb Vegetarian Chili

  • 1 package of vegetarian crumbles (or you could put in 1 lb. of ground meat)
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 tablespoon canola oil
  • 29 oz can crushed tomatoes
  • 29 oz can tomato sauce
  • 4 -15oz cans of beans (I like a variety such as red kidney, black, pinto, etc.)
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon chili powder (this makes for a mildly spiced chili; increase to 2 teaspoons for medium heat or 1 tablespoon for hot)
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dried oregano
  • ¼ teaspoon sugar
  • ⅛ teaspoon cayenne pepper
  • 2 bay leaves
  1. Heat oil in the bottom of a large pot. Add chopped onions and peppers. Saute 1-2 minutes, then add vegetarian crumbles. Break apart the crumbles and cook 3-5 minutes until lightly browned. (Add 1 tablespoon of water if the crumbles seem dry.)
  2. Add remaining ingredients and bring to a boil. Reduce heat to medium-low and simmer for 1-2 hours. Remove bay leaves before serving.
  3. **Optional slow cooker instructions: Saute onions, peppers, and crumbles as in step one, then add all ingredients to the slow cooker. Set on low and cook for 6-8 hours.
