Zucchini Blueberry Bread

Serves: 1 loaf
  • 3 eggs
  • 1 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 2¼ cups white sugar
  • 2 cups zucchini, shredded
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 cup fresh or frozen blueberries
  1. Preheat oven to 350 degrees. Lightly grease a bread pan.
  2. In a large bowl or with a stand mixer, beat together eggs, oil, vanilla, and sugar. Add flour, salt, baking powder, baking soda, and cinnamon and mix until well combined.
  3. Gently fold in zucchini and blueberries, then transfer batter to bread pan.
  4. Bake for 45-55 minutes or until a toothpick or knife inserted in the center comes out clean. Cool on a wire rack.
